This is one of our iconic dishes, you´ll find it in every neighborhood, it´s delicious, fullfilling and vegetarian in some cases.
HOW TO RECOGNIZE IT?
These stalls are usually run by women, you´ll see a big round pan (comal) with different shapes of corn masa items, a table with dozens of containers with ingredients, and 1 or 2 ladies working hard using masa, it can be white corn masa or blue corn masa.
WHAT IS IT?
Quesadillas in Mexico City are oval shaped tortillas stuffed with a wide array of stews and or cheese. Please remember that we don´t put cheese on the quesadillas unless you ask for it, if you only order a mushrooms quesadilla you´ll get mushrooms only.
HOW TO ORDER?
First you´ll need to choose from the variety of stuffings first these are the most common:
VEGETARIAN
Squash blossom – Flor
Mushrooms – Hongos
Oyster mushrooms – Setas
Herbs sprouts – Quelites (taste kind of spinach)
Cheese – Queso
Corn Smut – Huitlacoche
Potatoes – Papas
NON VEGETARIAN
Chicken – Pollo
Beef – Carne
Mice meat (with peas, carrots and potatoe) – Picadillo
Potatoes and chorizo – Papas con chorizo
Pork rinds – Chicharrón
Tripe – Panza
Brains – sesos
Each stall has its specialties and some places have more stews.
Once you picked your main ingredient you´ll say:
“Señora, me da una quesadilla de hongos por favor. ¡Gracias!“
This means, lady, can i have a mushrooms quesadilla please. Thank you
And remember if you want cheese on them, ad “con queso” after your main ingredient. Like this:
“Señora me da una quesadilla de hongos con queso por favor. Gracias!“
IMPORTANT INFORMATION
Price Range: 20 – 30 MXN per quesadilla
Operating hours: Mostly for breakfast and lunch, after 4:00 you won´t find many stalls open.
Should I tip?: Yes, it´s ideal to tip between 10 to 20 pesos per person.
