This is one of the best examples of how chilangos love bread and sandwich like dishes, it´s basically a kind of torta but different.
HOW TO RECOGNIZE IT?
If you walk by a stall displaying red-orange round and flat items stack one on top of the other. That´s a pambazo, they usually sell them at Quesadillas stalls but not all the time.
WHAT IS IT?
Bread dipped in adobo sauce (that’s why they are orange) stuffed with either potatoes and chorizo or chicken tinga (chicken stew with onions, tomatoes and chipotle) these are the traditional but you can ask for other stuffing if they are selling them at a quesadilla stall (CHECK THE QUESADILLAS STUFFINGS HERE) the traditional toppings for a pambazo are chopped lettuce, crema, and cheese.
HOW TO ORDER?
First you´ll need to choose your stuffing:
Potatoes and chorizo – papa con chorizo
Chicken – Pollo
Once you picked your main ingredient you´ll say:
“Señora, me da un pambazo de papa con chorizo por favor. ¡Gracias!“
This means, lady, can i have a potato and chorizo pambazo please. Thank you
And remember if you want cheese, lettuce and crema on it, say “con todo”
“Señora me da un pambazo de papa con chorizo con todo por favor. Gracias!“
